The end of the semester came about a week and a half ago. Ryan just went back to his summer job at the Geophysical Institute, and I’ve got another week until my one stats class begins.

I mean, between a couple classes and a film project over the summer, I’ve got a lot of free time. We won’t even be playing music until July (which is fine with me) but that leaves even more time I need to occupy. I mean, I really really need to occupy my time because I’m picking the crust off my dog’s lips and watching youtube videos on how to clean my original New Balance shoes with Magic Erasers.

So after we go to hiking and glaciering out past Delta this weekend I think I’m going to start making a batch of miso. A past time I really enjoy is reading health magazines and this month’s Natural Health focuses on probiotics and detox plans. The section on fermentation caught my eye-

The primary benefit of fermentation comes from nutrients created by active bacteria. For example, when milk is fermented, lactic acid bacteria synthesize folate and produce health fatty acids that are essential for digestion and immune function…One 10-year study of 21,000 women at Tokyo’s National Cancer Center Research Institute found that subjects who ate at least three bowls of miso soup a day cut their risk of breast cancer by 40 percent compared to those who ate less than one bowl daily. Eating two bowls a day still cut the risk by 26 percent.

Several of the recipes I came across substitute soybeans with chickpeas. If I remember correctly all of that stuff about Asians avoiding cancer was due to their high consumption of soy based products. Those recipes using chickpeas noted the need to avoid GMO soybeans. I’m not even sure if I can find that here, so this is potentially my first account of Monsato making things difficult. I most definitely will not spend a year of my time fermenting freak mutant beans.
